This 4-hour course equips students with the knowledge and skills to ensure that the meals they are serving are safe, delicious, and meet the nutritional needs of their residents. This course covers regulations and budgeting, food safety practices and meal planning principles, modified and supplemental diets, the four pillars of food safety, and common food safety myths. We will also
explore the science behind foodborne illnesses and identify common risks.
